Lee<\/b><br \/>\n<br \/>\n<b>Retired Vancouver Councillor &amp; Judge, Critics&#8217; Choice<\/b>\n<\/p>\n<p>\nI grew up eating Chinese food cooked from recipes passed on from my great grandmother; but my appreciation of Chinese food does not stop at its authenticity.<\/p>\n<p>I was born in Macau, a Portuguese colony. I enjoy the fusion of Portuguese flavour in my Chinese dish, and vice verse. The chicken, the salty fish, the special flavored egg tart, just to name a few, never stop to please my palate.\n<\/p>\n<p>\nI grew up in Taiwan, an island where people from almost every province<br \/>\nin China gather, where strong Japanese culinary influence exists. Their<br \/>\ncuisines are so diverse and readily available everywhere in Taiwan,<br \/>\nthat home cooking often includes experimentation of various indigenous<br \/>\nrecipes.\n<\/p>\n<p>\nI also lived in New York for over ten years\u3002A melting pot of all<br \/>\nculture, flavoured with multi-ethnic cuisine, New York offers wide<br \/>\nranges of food: Thai, French\uff0cKorean, Russian, American steaks, Japanese<br \/>\nsushi, and yes, Chinese noodle and Italian Spaghetti. If you have the<br \/>\nappetite, you can enjoy them all in one day\u3002<\/p>\n<p>Here in Vancouver, we are blessed with the benefit of freshness and<br \/>\ntrue authenticity: Seafood, vegetable, pork, poultry and beef, cooked<br \/>\nand presented by ethnic chefs in cultural-rich restaurant settings.&nbsp; <\/p>\n<p>Vancouver&rsquo;s Chinese cuisine has been mainly Cantonese, but the<br \/>\nincreasing number of immigrants from Taiwan and mainland China also<br \/>\nbrings in excellent ethnic cuisine choices.&nbsp; Compare to New York where<br \/>\nI had coffee and sandwiches for lunch most of the time, I am totally<br \/>\nspoiled in Vancouver where I can enjoy dimsum, congee or dumpling;<br \/>\nNorthern or Cantonese Chinese noodles any day, all within walking<br \/>\ndistance.<\/p>\n<p>To me, it is not only about how different cuisine tastes, but how you<br \/>\nmix them together in one meal or even on the same dish.&nbsp; I believe<br \/>\nauthenticity is important, that is how we keep our tradition; but<br \/>\nfusion is divine, that&rsquo;s how we grow. <\/p>\n<p>After all, it&rsquo;s not where it comes from, but how good it tastes.&nbsp; That<br \/>\nis what &lsquo;Chinese Restaurant Awards&rsquo; is all about &ndash; recognizing the best<br \/>\nof flavours, presentations and application of ingredients.\n<\/p>\n<p><\/p>","protected":false},"excerpt":{"rendered":"<p>B.C.
