Seasoned tasting menu
Familiar Flavours, Bold Ideas, and a Voice of Its Own
Founded by Alvin Leung, the chef behind Hong Kong’s Bo Innovation, and Eric Chong, the inaugural winner of MasterChef Canada, aKin brings a welcome sense of adventure to Toronto’s dining scene. Chong’s cooking draws on Chinese heritage, Asian flavours and influences from beyond them, with the confidence to make something personal out of that mix.
A look at this season’s menu gives a sense of the fun. Its inspiration is Asian takeout: the food we bring home, crave after a long day and associate with familiar people and places. Chong takes those memories seriously enough to build a tasting menu around them. It is a bold choice, giving everyday comfort food the attention and scope usually reserved for more conventional fine-dining subjects.
There is something refreshing about seeing this approach in Canada, where such a personal, playful expression of Chinese cooking is still uncommon. The menu invites diners to reconsider flavours they think they know and enjoy the surprise of finding them in a different form. It is best approached with curiosity, an open mind and a willingness to let the chef take a few chances.
Guests can settle into the dining room or choose the chef’s table for a closer view of the kitchen at work. In either setting, the appeal lies in discovering how Chong develops his ideas over the course of a meal. The ambition is clear, but so is the sense of enjoyment.
It is encouraging to see a chef give his own food memories and cultural identity this much room at the table. At aKin, Chong treats that background as a source of possibility, creating a style of cooking that feels increasingly his own. For adventurous diners, that is a compelling reason to see what he does next.
