Once More Restaurant has only been open for less than a year, but with its traditional Chinese decor, diners feel transported back to the good old days. Oil-paper umbrellas adorned with Peking Opera motifs frame the ceiling and add a touch of nostalgia. It specializes in Chinese Northeastern cuisine, which is known for a variety of cooking styles, such as stir-frying, sautéing, grilling, steaming, stewing, deep-frying, and braising. Their dishes not only have a wide variety of ingredients but also have distinct salty, sweet, and rich flavours, with a vibrant and colourful appearance. Their Steamed Egg Plant with Garlic and Fried Stinky Tofu with Spices & Herbs, for example, demonstrate the boldness of the Northeast. Additionally, their Chopped Peppered Fish Head and Chopped Peppered Black Cod demonstrate the restaurant’s Northeastern approach to West Coast Canadian seafood. Chinese Northeastern cuisine is also characterized by its Beef Pot, filled with fatty beef slices, steak, beef heart, beef, lungs, and tendons; the bold flavours and aroma have gotten diners coming back time and time again.
