In the ever-evolving world of Cantonese dining, few chefs embody the quiet perseverance and technical mastery of Chef Garley Leung, the revered Dim Sum Head Chef at Dynasty Seafood Restaurant.
Leung began his journey in 1970s as an apprentice of northern-style dim sum at Hong Kong’s Peking Garden in Alexander House, before further honing his skills at its Tsim Sha Tsui location. When he arrived in Vancouver in 1981, he became part of the city’s first wave of dim sum chefs, shaping its culinary identity through roles at Pink Pearl, Shun Feng, Shi Art, and Fortune Garden, before bringing his steady hand and uncompromising standards to Dynasty Seafood.
Now 66, with more than four decades of experience, Leung is celebrated for his rare dual expertise in both northern and Cantonese traditions—an essential yet increasingly uncommon foundation in the dim sum world. Each creation under his care, whether dumpling, pastry, or even the new classic sweet pancake with nuts & cocnonut flakes, reflects not only flawless technique but also the wisdom of a chef who has dedicated 45 years to perfecting his craft.
