In Vancouver, where many Chinese chefs quietly hone their craft, Jiangnan Wok has quickly emerged as a name to know. Crowned Best New Restaurant in Vancouver in 2024, it brings a rare spotlight to Huaiyang cuisine—one of China’s most refined, elegant, and technically demanding culinary traditions.
At the helm is chef-owner Allen Guo, who trained under Huaiyang master Chef Zhang Xianmin and refined his skills in China’s top hotel kitchens before relocating to Vancouver. After years of local experience, he opened Jiangnan Wok in Richmond, a space where his cooking philosophy—rooted in balance, precision, and seasonal sensitivity—takes centre stage.
The menu is a study in restraint and refinement. Dishes such as Nanjing-style salted duck, slow-simmered Lion’s Head meatball, and crispy deep-fried yellow croaker exemplify the subtlety, structure, and soul of Jiangnan flavours. Each plate reflects the quiet discipline of Huaiyang cooking, where clarity of taste outweighs extravagance.
Since opening in summer 2024, Jiangnan Wok has built a loyal following, with diners lining up even on weeknights for a taste of its authentic Jiangnan flavours. With humility and heart, the restaurant is reshaping the conversation around Chinese dining in Metro Vancouver—one meticulously crafted dish at a time.
