At The Happy Crane in San Francisco’s Hayes Valley, chef-owner James Yeun Leong Parry draws on years of cooking in Hong Kong and experiences across China. His menu brings those influences together in food that is confident, playful and welcoming, with a personal story behind its varied regional flavours.
Hong Kong’s attention to technique and Sichuan’s bold seasoning are among the foundations of Parry’s cooking. He gives himself room to explore beyond any one region, finding new ways to use familiar ingredients and preparations. The result reflects a generation of chefs drawing on their own experiences to broaden the possibilities of Chinese dining in America.
There is plenty of pleasure in that approach. Firecracker Shrimp delivers a lively burst of flavour, while Lobster Noodles draw on the appeal of a classic Chinese seafood feast. For dessert, a Ferrero Rocher-inspired Jian Dui gives the traditional sesame ball a chocolate twist, bringing a sense of humour to a familiar festive treat.
