Chef Vicky Cheng first made his name with VEA, a restaurant built on a French x Chinese philosophy that was less about blending and more about dialogue. If VEA was the conversation, WING is the statement. Named after Cheng’s own Chinese name, it is his most personal project: a restaurant devoted entirely to Chinese cuisine. Here, he looks beyond Cantonese roots to embrace the breadth of the Eight Great Chinese Cuisines, capturing the essence of regional traditions while refining them into something assured and contemporary.

Served with a sauce made from its own jus and spring onion, the dish elevates a humble dim sum into something refined—honouring tradition while moving it forward.
