A Life Shaped by Cantonese Cuisine

For Jayson Tang, Cantonese cuisine has been a lifelong calling. Born and raised in Hong Kong, his earliest memories are tied to his parents’ dai pai dong, where the rhythm of wok and flame sparked his love for cooking. That passion led him to the Chinese Culinary Institute, where he immersed himself in the history, flavours, and techniques of regional Chinese cuisines, building the foundation for a career defined by both respect for tradition and a vision for renewal.

From Youngest to Leader
After graduating, Tang refined his craft in top hotels and restaurants, apprenticing under masters including two-Michelin-starred Tin Lung Heen’s Executive Chef Paul Lau. His breakthrough came at just 29, when he became the youngest executive Chinese chef of a five-star hotel in Hong Kong. Today, as Executive Chinese Chef of Man Ho at JW Marriott Hotel, he channels nearly two decades of experience into menus that honour heritage while engaging modern Hong Kong dining culture.

Reinterpreting Tradition
Tang’s cooking philosophy is clear: every classic has a reason for its existence—whether through ingenious pairings or a distinctive flavour profile. By first understanding the history, then applying contemporary ingredients and techniques, he crafts new classics without eroding their roots. His signature Pan-fried Fish Maw in Creamy Almond Chicken Broth illustrates this ethos: Pakistani saltwater fish maw is soaked in almond-and-chicken broth for two hours, coated in egg wash, then seared to a crisp crust while remaining soft and glutinous within. Finished with gold leaf and paired with crisp lily bulbs, the dish is refined, elegant, and unmistakably his own.
